Cypress cutting board by Tosaryu

WOODEN PRODUCTS BY A COOK OF WOOD, "TOSARYU" (土佐龍), MORE OF LIKE A MAGICIAN TO ME.

In Kochi prefecture, there is a company called "Tosaryu" - wooden craft maker of various items which founded in 1970. The items made are extensively from interior to bath and kitchen goods. Knowing more about them is convincing that they call themselves as "a cook of wood".

"The best material for the right use".

That's Tosaryu's motto. For example, there is a way to make use of the characteristics of the tree when building a house. Since ancient times, "cherry tree" is utilized as floor material, the outer wall is "cedar", used accordingly to those original characteristics of wood as the material. In the same sense, "Hinoki / cypress" is suitable for products around water because there are so many oil components, and "cherry" is perfect material for washing board because of its fine texture, which contribution to the result, damage-less to the clothes. Furthermore, "Chestnut tree" is resistant to heat, "Kusunoki" is suitable for making products that make use of the repellent effect against black carpet beetle known for eating clothes.

Taking advantages of each feature is essential to crafting woods.

Cutting boards introduced in this post are made from cypress called "Shimanto hinoki" (四万十ひのき). 2 major characteristics of the wood are:

1. Cypress in southern area grows taller, thicker and more durable due to active photosynthesis.

2. Kochi is one of the place where experience strong typhoon in summer. So, cypress in the area contain more oil components to maintain elasticity in order to withstand windstorm.

In result of using the Kochi's cypress for cutting board, they are high antimicrobial/ antifungal effect, quick dry, and last very long. Most importantly, aroma of cypress calms you down and make you feel positive. It maybe a good idea to sniff the cutting board when you're feeling down.

Plaining off the corners tells us Ttosaryu's dedications to the products. Sliding a finger on corners is perfectly safe, in fact, feels comfortable like touching smooth skin.

Thickness is just about 3cm, which makes heavy with presence.

Cutting on this board made me feel like listening for an instrument. It makes dry sound every time cut something, the sound that never heard of before using other chopping board. Elasticity of the board is very important factor for protecting blade of kitchen knives, and you will feel the force given back by the board.

If you are planning to buy expensive kitchen knives in Japan. Make sure to buy really good cutting board for reasons mentioned in above. Among all those good boards, ones that are made from Kochi cypress is recommended.

It is a noteworthy fact that this board is 2cm thin. After having naturally dried for 100 days, it is dried again for about 1 week at a temperature of 70 degrees and drop the moisture content to 10 percent. Then, flip over and age for 2 more weeks.

Then curve appears on either side, but when you apply planer in that state, it will not curve any further.

With all the effort done, 2cm thin single plate board is born.

Plus, this board has a stand.

This feature makes it even more quick-dry than ordinal cypress products. It is also highly effective in sanitation which I'd recommend this board to mums and dads who have infants just started to eat. You can never be too careful when preparing the first meal for a baby.

Each corners are carefully sanded, there is no burrs.

This board is extremely light as a wooden board, quick dry, hygiene effective, durable, therefore lasts long. Using this type of cutting board also contributes to sharpness of knives due to its hardness. One of the reason for nicking in a blade is chipped board.

Grooved board with a handle.

Hard cherry wood is perfect material for pizza cutting board. Grooves on the board smoothly guide cutter in straight line.

Due to its fine surface, pizza won't be pushed to the side the blade is going. The grip given by the board is good.
