German tree cake by Jiichiro
WHEN IT COMES TO BAUMKUCHEN SHOP IN JAPAN, IT'S ALWAYS "JIICHIRO" (治一郎).
"Jiichiro" is one of the most famous Baumkuchen store in Japan. Too many Japanese are under spell of soft and moist German tree cake made by the shop. Outside of the cake is covered with moist sugar layer which is a bit slightly sweetened than others you can find in Japan. It says there's no need to have beverage because the Baumkuchen is light and moistured. But hey, having a cup of coffee or tea on the side surely makes you can't stop eating.
There are 18 shops throughout Japan, from Miyagi to Fukuoka. (There is no more further north of Miyagi, at the moment.)

Opened the package and put on a chopping board. As soon as held in my hands, I could tell its weight, heavy. The whole package is something Jiichiro must be very particular about. Using material that the baumkuchen can breath, so its moisture is kept for 2 weeks.
Boom! I bought the biggest size, 8cm height. You see its surface, the layer of sugar is so moisturized.
These layers are put by experienced craftsman (chef) to be precisely rare. That's why Jiichiro's baumkuchen has depth in flavor and, most importantly, the texture.
The texture is very unique. It's kind of mixture of moist outside and fluffy inside. Feels full-bodied but also melts in mouth.
Respect that Jiichiro's style of not flattering the mass market by making "common" sweets. Hope you'll like the "uniqueness" when you actually try.
