Kawara soba by Otafuku
SOBA ON ROOFING TILE, IS CALLED KAWARA SOBA.
Kawara (roofing tile) soba is Yamaguchi's local food. Known for its high-impact visual and credibility in taste.
This food was invented in 1960s, inspired by Satsuma rebellion war. (At the war time, soldiers used roofing tile as cooking pan at war zone. )
Now, roofing tiles used at restaurants for Kawara soba are specially ordered. No paint material used, break-proof, and high heat-retention.
WHERE IS THE BEST PLACE TO TRY?
I recommend Kawatana Grand Hotel because you can try Kawara soba at their restaurant and buy it for souvenir. Cooking is very easy and simple. And of course, roofing tile won't be needed. (In fact, you should not be bothered finding and placing roofing tiles because there is no guarantee it is safe to use.)
INGREDIENTS USED.
Some of the ingredients can be bought at any supermarket. If you can't find an alternative, move on. The best part of Kawara soba is fried, crispy soba on bottom.
1. Green onion.
Cut green onion for 3mm to 5mm size.
2. Shredded omelette.
Make a thin omelette and shred with kitchen knife.
3. White radish and red pepper.
Place red pepper in water for 5 to 10 minutes to make it soft.
Cut white radish into rectangle big enough to fit the soften red pepper.
Put the red pepper in between white radish and grate.
(It should become red color grated radish.)
4. Lemon.
Make a couple of slices.
5. Beef.
Put soy sauce, sake, and sugar in a bowl.
Don't make it too sweet.
Stir beef with the above.
6. Seaweed.
HOW TO PREPARE SOBA.
1. Boil water.
2. Put a pinch of salt into boiling water and soba.
3. Boil for 4 minutes.
4. Drain in a strainer and wash soba with cold water.
(This process makes the soba to firm and chewy.)
5. Stir soba on flying pan.
(Don't mingle on the pan. Place soba flat and heat with low temperature.)
6. Placing soba.
When soba on bottom is crispy, place on a plate. Put toppings you prepared.
7. Bon appetit!
Dip into the sauce to eat. Diluting is not recommended.

Soba and soup is packed in a box. A box serves around 2 people. On bottom, soba is crispy and chewy on top. Mixture of texture and taste is perfect.
It is always a good idea to cook boiled soba on electric griddle.
