Deba knife, (出刃包丁 大寸).
Price: ¥6,500
Size: 18cm
Deba knife is used to cut and slice fish. Deba's blade tends to be heavier than other type of knives. The design is to cut fish bones smoothly.
Aokami Tsuchimenashiji, (青紙 槌目梨地). Price: ¥12,000
Size: 17cm
Rectangle blade knife is used to cut vegetables. Aokami is type of hard steel which has long lasting hardness.
