Here's simple way to enjoy mentaiko. Ingredients are simple, butter and oilve oil. The olive oil used is made with Oku's "UMAMI SHOYU NO TANE" which I posted before. Of course, any olive oil works, too. Boil spaghetti while you prepare these.
Prepare seaweed, if you can, and slice thin to add a bit of seafood aroma.
Add butter and olive oil on boiled spaghetti. By adding these, it adds depth in the taste and avoids spaghetti to get caught.
Stir and mix well quickly while the spaghetti is warm.
Add mentaiko.
Found a pre-dried scallop which friend of mine gave it to me a while ago. I decided to use it before goes bad.
Shredded into small pieces. Add it and mix again.
Serve on a plate and put sliced seaweed on top.
Itadakimasu. Flavor of marinated cod roe and spiciness are mild. But it matches delightfully with butter and olive oil. Fresh smell of seaweed is appetizing.
A simpler way to enjoy this magical powder is to use on grilled fish. In this case, grilled Japanese sea perch and place on Japanese herb, "Shiso" (しそ) and sprinkled the powder, no salt. Mentaiko should work well on any kinds of white-fleshed fish.
