If you are interested in Japanese traditional crafts, tinware should come right up in your list. Tinware is strong, easily-shaped, and non-toxic crafts. It is one of the most beautiful artwork in Japan.
"Nousaku" (能作) is probably one of the most well known tinsmith not only in Japan but world wide. With over 100 years history as tinsmith for Buddhist altar equipment, which require very sophisticated skill and knowledge. There are retail shops in Toyama as where it's started, Tokyo, Osaka, Aichi, and Fukuoka.
